Friday Ham & Egg Pizza

Kathy had to go out to dinner with clients tonight, so l made pizza at home for dinner, using Mission thin pizza bases, we bought from Coles sometime ago and kept in the freezer. I used the left over capsicum, garlic and red onion from yesterday, l added some sun dried tomato and then pureed them in the small blender into a pesto like sauce for the pizza bases sauce. I then added some red onion rings that had been quickly fried in a covered pan until they caramelised, some sliced leg ham, cheddar cheese and egg.

I cooked the pizza on a tray in pre-warmed 240C oven for 10 minutes and cut it into sections and ate it, was great taste and texture, the capsicum, onion and garlic paste will make a great pesto pasta dish on the weekend

Thursday Chicken Wings & Veggies

Dinner tonight l used the turbo oven to cook some chicken wings, which had been dusted in Corn Flour first with dried chilli flakes and black peppercorns, for 40 minutes, turning the wings over at the 20 minute mark to give them an even browning.

The sweet potato l cu into wedges and shake din water for an hour before pre-cooking them in pot with water for five minutes, then tossing them in some canola oil and paprika and sprinkled them with salt and baking them in pre-warmed 220C oven for forty minutes. I sliced a zucchini in half and then into quarters and tossed it in oil and paprika and baked it in the oven with the sweet potato for thirty minutes.

I used my bean slicer to cut the runner beans into slices and then cooked them in small pot of water. I pan fried sliced red and green capsicum with garlic and red onion rings and served them with the chicken wings.
