Monday Pizza

Dinner tonight was Pizza, using the Turkish Pizza bases, we bought for $1.60 apiece, from the Istanbul Kitchen, on Fitzgerald st, North Perth,   on Friday night, when we got our kebabs for dinner after shopping.

We cooked them on the pizza stone in the Weber 2000 for about 10 to 12 minutes which had been pre-heated for 20 minutes beforehand,

Friday Pizza

Fired up the Weber Q 2000 and we had pizza, we used Turkish pizza bases bought from the Istanbul kitchen Kebab shop on Alexander Road North Perth for $1.60 on Wednesday night when we bought our kebabs after shopping at Coles.

My pizza had tomato, onions, mushrooms, pineapple, cheese, beef sausage and egg, Kathy had tomato, onion, mushroom, pineapple and ham on hers.

Pizzas were cooked on the Weber pizza stone for 12 minutes.

Sunday Spicy BBQ Tuna

Sunday dinner was Tuna pieces marinated in a Korean Spicy sauce for couple of hours and then BBQ on the Weber Q 2000 grill mat with sliced mushrooms, capsicum and onion and served with a salad.

Friday Roast Pork

Cooked a 1.7 kilo rolled shoulder roast pork today for dinner on the Weber Q 2000 for dinner with potatoes and sweet potatoes and served them with carrots, mint peas, corn kernels and green beans.

The pork was cooked on high for 20 minutes and then for another hour and thirty minutes on normal roasting temperature and then was allowed to rest in the Weber for 20 minutes before serving. The potatoes and sweet potatoes were par-boiled for 10 minutes before cooking in the Weber with the pork for an hour and allowed to rest with the pork in the Weber. The other vegetables were cooked in pot on the stove for 10 minutes while the pork was resting in the Weber just before serving.

We used half of the roast for dinner for two, the other half we will have in Pane Di Case rolls with salad and mustard tomorrow for lunch.

Sunday Hamburgers

Kathy had friends over to play some board games in the afternoon and general catch up and gossip session, for lunch we made hamburgers on the Weber Q 2000. I bought some Hamburger Roles and Kaiser Rolls so they had choice of buns, l made the hamburgers patties in the morning using my hamburger gadget, they were 120 gram about McDonald Burger patties size.

Hamburger toppings on offer were

  • Beetroot
  • Pineapple
  • Cheese
  • Jalapeños
  • Ice Berg Lettuce
  • Fried Onions
  • Eggs
  • Bacon

Combinations had by people were

  • Kaiser roll with hamburger, egg, jalapeño and lettuce
  • Hamburger Roll with hamburger, egg,  bacon cheese, fried onions and lettuce
  • Hamburger Roll Toasted, hamburger, bacon, jalapeño, cheese, egg and lettuce
  • Hamburger Roll Toasted, hamburger, jalapeño, cheese, lettuce
  • Hamburger Roll Toasted, hamburger, pineapple, bacon, cheese, jalapeño, beetroot, fried onions and Lettuce

Friday Coconut Chicken Curry

Dinner was coconut curry chicken, which l made on Thursday to enable the curry to develop its flavour, as curries benefit from a day of rest after it’s first cooking.

  • 2 chicken thighs, par boiled and meat removed
  • 2 x medium brown onions diced
  • 2 x potatoes
  • 1 garlic
  • 250 ml coconut cream or milk
  • 500 ml chicken stock or water.

I par boiled two chicken thighs and allowed them to cool, then stripped the meat off the bones and diced it. I diced two potatoes and two medium brown onions and put them into a pot with three tablespoons curry on low heat then added the garlic which l had first microwaved for a minute and then mashed with back of a fork. I added the coconut cream or milk and chicken stock (l used the water that had been used to par boil the thighs in after removing the scum) and the chicken pieces and allowed the curry to cook slowly with the lid on for couple of hours until the curry thickened.

Curry was served with papadam which had been sprayed with canola oil and microwaved for a minute to make them pop and crunchy.

Sunday BBQ Pork & Potato and Pumpkin Au Gratin

Sunday lunch was a two kilo rolled forequarter of pork, cooked on the Weber Q 2000 BBQ, l cooked the pork for 30 minutes per 500 grams, the first 30 minutes on maximum and the remainder of the cooking time five notches lower.

Unfortunately this pork joint was overly fatty in the centre of the rolled joint and as it cooked the fat dripped out and caught alight, this normally doesn’t happen, l drained the excess burning fat out of the tray and lowered the temperature another couple of notches, the fire had snapped the bag strings, so laid the joint out flat for the remainder of it’s cooking time.

The potato, onion and pumpkin were sliced using the medium setting on my mandolin and were layered into the baking tray with grated parmesan cheese and a mixture of one cup milk and one cup cream which had pureed garlic bulb in it were poured over the layers. The au gratin was baked in a pre-warmed 180 C oven for hour and ten minutes.

I steamed cabbage, broad beans, green beans and corn on the cob in a pot on the stove to serve with the meal.

Sunday BBQ Duck

Shopping yesterday l bought a 2 kilo duck for $16, l decided to BBQ it in the Weber Q 2000, the Weber was heated on maximum for 30 minutes prior to posting the Duck in the Weber, when the duck was placed in the Weber, l turned the temperature down 4 notches.

As the Duck is very fatty bird, l placed the trivet the Duck was sitting on in a deep baking roasting pan to catch the dat as it melted out of the Duck, the fat l will save and use for cooking in the future, to help the Duck ooze its fat l pin pricked the Duck all over with the tip of small sharp knife. I filled the Duck cavity with a lemon which had been quartered and whole garlic bulb, l sprinkled salt and pepper over the Duck Skin before putting it on the BBQ to cook.

The Duck was cooked for 80 minutes (40 minutes a kilo) and allowed to rest for 20 minutes before carving.

I added the potato, onion and pumpkin to roast with the Duck, for an hour, the potato was par boiled for 10 minutes before being put in the Weber to roast. I steamed in a pot on the stove, cup of runner beans, Asparagus, two diced carrots and two corn cobs, ten minutes before serving the Duck.

Sunday Chilli Chicken BBQ

Fired up the Weber Q 2000 for 30 minutes on maximum before putting the butterflied chicken on the trivet to cook for two hours, three notches lower than maximum. The chicken was butterflied by running the knife down through the breast bone and opening the chicken and then patting it down flat, so the meat was facing up. I then sprinkled it with salt & pepper and dried chilli flakes and lightly spraying it with canal oil.

I par boiled some potatoes for ten minutes and one hour after the chicken started cooking l added them after a light spraying with canola oil on the trivet with a onion in its skin, next to the chicken and cooked them for another hour. Twenty minutes before the chicken was finished cooking l boiled some carrots. Ten minutes before the chicken was finished cooking, l added the corn to the carrots and five minutes before the chicken was ready l added the minted peas, green beans and broad beans to cook.

  • 2 kilo chicken butterflied
  • 1 cup minted peas
  • 1 cup broad beans
  • 1 cup green beans
  • 2 carrots diced
  • 2 potatoes quarter and par boiled before roasting
  • salt & pepper
  • dried chilli flakes
  • canola oil for spraying chicken and potatoes.
  • 1 brown onion roasted in its skin

Easter Saturday Roast Pork & Veggies

Dinner was done on the Weber Q 2000 tonight, l roasted a rolled shoulder Pork, which was 2 kilos, with potatoes, onion and  pumpkin, whilst on the stove in pot we steamed 2 carrots,  cabbage, 1 cup peas & corn and 1 cup broad beans,

The Weber Q 2000, was lit 30 minutes before the pork started roasting, then l placed the pork on a trivet on  top of a grill tray and let it cook on maximum heat for 30 minutes to cook the crackle, l then turned the Weber Q down three notches and cooked the pork for another hour and half hours. One hour after the pork started cooking l added the potatoes and onion to the trivet that the pork was cooking on, the potatoes had been par boiled for 10 minutes before roasting commenced.

The pumpkin was added 45 minutes before the pork was finished cooking on the Weber Q 2000, the vegetables were cooked in the pot of boiling water on the stove 15 minutes after the pork  finished cooking and was resting , before carving.

Pork Cooking Times

The Pork is cooked for 30 minutes per 500 grams, the first 30 minutes on maximum the remaining time three notches lower than maximum, the roasting vegetables are cooked for hour on the Weber with the Pork.
